Mediterranean Chicken Pasta Salad

This chilled salad is one of my favorites. Full of colorful vegetables, fresh herbs, and big on Mediterranean flavor. I’m obsessed with the Seggiano Grilled Artichoke Hearts and anytime I can add them to something, I do. And nothing beats their flavor in this salad. They pair perfectly with Italian seasoned bbq chicken, sun-dried tomatoes, olives, rice pasta, basil, parsley, olive oil, and some lemon…. my mouth is watering already. I love this recipe and I hope you and your family do too! Print Mediterranean Chicken Pasta Salad This recipe makes a large batch,…

Dark Chocolate Covered Walnuts, Pecans, and Almonds

My mom made these chocolate covered nuts for me, shared her recipe, and now I keep them on hand as much as possible! Her’s always taste better (she’s the candy master), but this recipe gets me through 🙂 My favorite thing about her signature recipe is that she grows her own walnuts, pecans, and almonds! We have a small family farm in northern California and growing up, I totally took it for granted. Now, I beg her to ship me fresh things to Las Vegas. Especially the walnuts. A light blonde color, plump with healthy oils,…

Matcha Latte

As a personal trainer, I used to love coffee. It gave me a quick pick-me-up and got me through long days of working and training. But it came with a few caveats. For starters, there’s the jittery induced anxiety, which does more to distract my focus than align it. And then there’s a crash, so I go for another cup, another…and another. Even worse, I have a sensitive stomach, which both caffeinated and decaffeinated coffee tends to aggravate. So, I started experimenting with tea and eventually stumbled across matcha, which is essentially ground up green tea leaves. It turned out…

Sourdough Bread Starter Guide

Last year I dedicated myself to learning the art of sourdough and now I bake bread almost weekly! It has a bit of a learning curve and when I got started I was overwhelmed with the amount of information. I didn’t know where to start! My goal with this blog post is to provide you with step-by-step instructions and resources to get you started with baking sourdough bread as quickly as possible. Step 1: Starter The first thing you’ll need is a sourdough starter. This is a living, breathing organism that gives your bread rise, flavor, and the signature…

Slow Cooked Korean Beef

This is my healthier version of Korean beef. Most recipes call for sugar to balance the garlic, ginger, and green onions, but I find it much too sweet. Instead I use the slow cooking process to reduce the coconut aminos, vinegar, and onions. This caramelization creates a sweet flavor, without the addition of sugar. And since I like my Korean beef on the more savory side, I also add mushroom powder to enhance the flavors. Any blend of ground shiitake or porcini mushrooms will work great (recipe coming soon). Or use Nom Nom Paleo’s Magic Mushroom Powder.

Oven Roasted Garlic and Olive Oil

I love having roasted garlic on hand. You’ll always find this kitchen staple in my fridge, right next to the sourdough starter 🙂 Baking the garlic in olive oil yields a tender, roasted clove plus you get delicious infused olive oil. It’s easy to grab and adds a delicate garlic flavor to every dish. Win win! Print Oven Roasted Garlic and Olive Oil The hardest part about this recipe is peeling the garlic. I recommend smashing the garlic with something sturdy (rolling pin, meat mallet, or back of thick knife) then removing the outer…

Upper Glute Burnout

This booty burnout 🔥 Reverse hypers and lateral band work… gets the upper glutes every time 👌🏼 For this workout I used the S/M Regular Glute Loop from Bret Contreras. I like to place the band right above my knees, which is where I – along with most – feel the best glute activation. But you can also try the band below the knees or even higher up on the thighs. Play around with it and find what feels best for you! 🤗 Enjoy the burn on this one!! 2-3 Rounds of: 20 Prone Leg Taps 10 Reverse…

Ray’s Green Juice

Green juice! Some people swear by daily doses and others turn up their noses at the sugary beverage. Me, I’m somewhere in the middle… like most things. If you use a lot of fruit then yes, your juice will be high in sugar. But, if you use mostly vegetables and you enjoy them, then juice it up! Eating more organic produce is great for you! And I’ve found that juices are gentler on the stomach compared to eating raw vegetables. My stomach tends to bloat easily with too much fiber and I found the juices to be more soothing and…
