Granola Cookies

Turns out, granola makes the best oatmeal cookies! Instead of using rolled oats which never cook through, I use granola to lend the perfect crunch. I also add yogurt and an extra egg yolk to the batter, that way you get a chewy centered cookie, even the next day!
