Base Granola

I love cereal! I mean, who doesn’t, right? The problem is most “healthy” cereals are expensive, super high in calories, and contain a ton of unnecessary ingredients. This base granola recipe is my solution. It’s easy to make, delicious, and takes less than ten minutes to prep. Eat it by the handful or pour over milk for cereal!

The bulk of this recipe contains gluten free sprouted oats along with pumpkin and sunflower seeds. I also add finely shredded coconut and pecans for extra flavor and texture. To keep it nut free, omit the pecans. I toss everything in coconut oil with maple syrup to sweeten and balance with a little bit of grey sea salt. This recipe is my favorite for dessert with some gut-healthy yogurt and fresh fruit.

  • 1/2 Cup Pumpkin Seeds
  • 1/4 Cup Sunflower Seeds
  • 1/2 Cup Finely Shredded Coconut
  • 1/4 Cup Pecans
  • 1/4 Cup Coconut Oil
  • 1/3 Cup Maple Syrup
  • 1/2 Tsp Grey Salt

Instructions

  1. Heat oven to 320 Degrees Fahrenheit and gather ingredients. Place all ingredients into a mixing bowl: 2 cups of rolled oats, 1/2 cup raw pumpkin seeds, 1/4 cup raw sunflower seeds, 1/2 cup finely shredded coconut, 1/4 cup crushed pecans, 1/4 cup melted coconut oil, 1/3 cup maple syrup, and 1/2 teaspoon of salt.

  2. Toss ingredients to coat well. Taste. Balance maple syrup and salt to your liking.

  3. Spread granola mixture onto parchment lined baking sheet.

  4. Bake at 320 Degrees Fahrenheit for 30-45 minutes or until slightly browned.

  5. Let granola cool and harden. Break into pieces and store in an airtight container. Will stay good for a couple weeks, if it makes it that long!

Made this yesterday and added in cashews (did everything else same in recipe). Easy, quick and adjustable to preferences. Tastes great! I’ve been snacking on it and adding it to my yogurt. Thank you!
