In Thailand, I ordered this Thai chicken salad all the time. Like every day. Paired with Som Tam and sticky rice it’s my absolute favorite. My go-to egg salad recipe. I like to use avocado mayo, OG mustard, probiotic rich pickles, and stuff it full of veggies. Then use vegetable sticks as my spoon. This recipe is so simple and delicious I had to share! I’ve been making this salad like slaw for a couple weeks now and it’s become a staple. You can mix and match ingredients however you’d like, but my go-to ingredients are: cucumbers, endive, radicchio, radishes, and green olives.
