Chicken Sandwich Salad
This salad is one of my favorites! I use a chopped rotisserie chicken with a rainbow of vegetables and toss them together with a spicy pepperoncini-mayo dressing. Tastes like a sandwich with all the fixings!
Chicken Sandwich Salad
A great dish for meal prep! Packs well by itself or pair with lettuce greens, chips, crackers, wraps, or sourdough bread.
Ingredients
Pepperoncini Dressing
- 1/4-1/2 Cup Sliced Pepperoncini's
- 1/4 Cup Chipotle Lime Mayo
Salad Base
- 1 Rotisserie Chicken, chopped
- 2 Carrots, julienned and diced
- 3 Celery Stalks, diced with leaves
- 4 Radishes, thinly sliced and diced
- 4 Green Onions, thinly sliced
- 1/2 Cup Red and/or Green Cabbage, thinly sliced and diced
- 1/2 Cup Baby Tomatoes, chopped
- 2 Tbsp Pepperoncini, chopped
- 2 Tbsp Parsley, chopped
- 2 Tbsp Dill, chopped
Instructions
Pepperoncini Dressing

Add 1/4 cup chipotle lime mayo and 1/4 cup sliced pepperoncini's to the immersion blender or food processor.

Blend until smooth. Add more pepperoncini's for a thiner, spicy sauce.

Set aside until ready to use. You can also double the batch for easy grabs. This sauce stores really well!
Salad Base

Gather ingredients.

Add chopped rotisserie chicken to a large bowl and toss with pepperoncini dressing. Add salt and pepper to taste.

Add prepared vegetables and herbs.

Toss well, until everything is coated. If needed, add more pepperoncini dressing.
