Peppermint Cups
Peppermint chocolate bars are great, but melted with coconut milk and layered with peppermint creme creates an experience. These peppermint cups are smooth like chocolate truffles and satisfy the cravings. I love that they’re creamy, flavorful, low in sugar, simple to make, and quick to snack!
Peppermint Cups
Use a paper lined, mini cupcake pan or silicone mold to set these peppermint cups. You can layer the mix once or sandwich the peppermint filling. A high quality chocolate bar will make all the difference. I recommend Divine or Hu Kitchen's dark chocolate mint bars.
Ingredients
Chocolate Mix:
- 1 Chocolate Bar, I used Divine Mint Chocolate
- 1 Tbsp Coconut Butter
- 2 Tbsp Coconut Milk
Peppermint Mix:
- 1/4 Cup Coconut Butter
- 2 Tbsp Coconut Milk
- 1 Tbsp Coconut Oil
- 1 Tsp Coconut Flour
- 1 Tsp Coconut Sugar
- 1 Tsp Peppermint Oil
Instructions

Start with a dark chocolate bar that you love! I used this Divine bar for extra mint flavor. It's my favorite because it has mint crystals throughout which lends a nice texture to the end result. You can use a regular chocolate bar though, just add a little peppermint oil after you remove it from the heat.

Chop chocolate bar.

Add all chocolate mix ingredients to one double boiler set-up: One chocolate bar, one tablespoon coconut butter, two tablespoons coconut milk.

Add all peppermint mix ingredients to another double boiler set-up: 1/4 cup coconut butter, two tablespoons of coconut milk, one tablespoon coconut oil, one teaspoon coconut flour, one teaspoon sugar, 1/8-1/4 teaspoon peppermint oil. *Optional - pinch of fresh vanilla beans.

Melt mixes over low, stirring frequently.

Layer mix. Use one teaspoon of each mix. Makes about 12 mini cups.

Freeze for 5-10 minutes in between layers.

Layer once for a half and half look or sandwich the coconut-peppermint between the chocolate layers.

Store in the fridge. Eat within 3-5 days.

These were so yummy and easy to make! They were a big hit at a birthday party(: I can’t wait to make them again, but first I want to find a lighter colored coconut sugar so they come out looking crisp and clean like yours!

Ive been wanting to try these for a while! Delish! Although i need to work on the perfect symmetry of the lines like yours! I would prob add a little more peppermint next time 🙂
