Oven Roasted Garlic and Olive Oil
I love having roasted garlic on hand. You’ll always find this kitchen staple in my fridge, right next to the sourdough starter 🙂 Baking the garlic in olive oil yields a tender, roasted clove plus you get delicious infused olive oil. It’s easy to grab and adds a delicate garlic flavor to every dish. Win win!
Oven Roasted Garlic and Olive Oil
The hardest part about this recipe is peeling the garlic. I recommend smashing the garlic with something sturdy (rolling pin, meat mallet, or back of thick knife) then removing the outer shell by hand. This recipe works great in small or large batches, just adjust your ratios. Bake this recipe on a lower temperature (325-350) to ensure the garlic gets toasted, but doesn't burn.
Ingredients
- 3-10 Heads Garlic
- 2-8 Cups Olive Oil
Instructions

Pre-heat oven to 325 degrees fahrenheit. Peel garlic.

Place garlic cloves in baking dishes.

Using a high quality oil - I love Kasandrinos - pour oil over garlic to cover.

Optional - Sprinkle with salt and pepper.

Optional - Add a few sprigs of rosemary.

Place baking dishes on a sheet pan and place in the oven.

Bake until garlic cloves are toasted and sightly browned.

Once cooled, add to glass jar and store in fridge. Use the oil for cooking, add the cloves to recipes, or spread on toast!
