Ray’s Green Juice

Green juice! Some people swear by daily doses and others turn up their noses at the sugary beverage. Me, I’m somewhere in the middle… like most things. If you use a lot of fruit then yes, your juice will be high in sugar. But, if you use mostly vegetables and you enjoy them, then juice it up! Eating more organic produce is great for you! And I’ve found that juices are gentler on the stomach compared to eating raw vegetables. My stomach tends to bloat easily with too much fiber and I found the juices to be more soothing and a great source of extra nourishment. I can pack them full of greens, herbs, and spicy ginger which I love! But, I’m very picky when it comes to green juices. Most need a lot of fruit to make them taste good, but I like to keep mine on the lower sugar side.

Thankfully Ray came to visit and showed me what’s up on balancing the green juices! His combo of cucumbers, spinach, kale, apple, mint, lemon, and ginger is so refreshing! The cucumbers keep it light, the greens keep it nutrient dense, the apples sweeten, the lemon balances, and the herbs lend the perfect flavor. This vibrant green juice… I actually savor it!

Ray's Green Juice

This green juice is perfect as is! However, if you like it sour add extra lemon or if you want it extra bold add more ginger. Adjusting the spices and herbs to your liking can help further balance this drink.

Prep Time 15 minutes
Servings 2 people

Ingredients

  • 1 Bunch Kale
  • 1 Bunch Spinach
  • 2-4 Cucumbers, peeled
  • 2 Apples, peeled
  • 1/2 Lemon, peeled
  • 1 Inch Ginger, peeled
  • 1 Small Handful Mint Leaves

Instructions

  1. Gather ingredients. Wash and peel vegetables, fruit, and herbs. 

  2. Process through a juicer. 

  3. Pour over ice. Enjoy!
