Lemongrass Sipping Broth
Sipping broth. One of the easiest ways to add extra flavor to your chicken broth. So good you’ll actually enjoy sipping it. This recipe reminds me of Thai coconut milk soup (Tom Kha Gai). The lemongrass and coconut milk lend a special sweetness to this broth. And the ginger completes the flavors. If you happen to find galangal, you can sub it for the ginger and make this dish taste even more like traditional Tom Kha Gai broth. Also, if you have Thai lime leaves on hand, add a few at the end to really brighten up this dish! The garlic is optional, but it’s great for your health!
Lemongrass Sipping Broth
Ingredients
- ~ 5 Lemongrass stalks
- Handful Fresh ginger, peeled
- 6 Garlic cloves
- 6-8 Cups Chicken broth
- 1 Box Aroy-d coconut milk ~ 1 cup
- Salt to taste
Instructions
-
Prep ingredients. Peel and slice fresh ginger root.
-
*Optional* Peel and smash a few garlic cloves.
-
Bruise a few lemongrass stalks. This will help release its flavors.
-
Add ingredients to stock pot with broth.
-
Heat until boiling, then turn down heat and simmer for fifteen minutes.
-
Add coconut milk to simmering broth and cook for another 5 mins.
-
Once infused, strain broth and discard the flavorings. I like to put a strainer over my Vitamix pitcher. This makes it easy to strain and pour my sipping broth into mason jars.
-
Store broth in glass jars in the fridge. Will keep for ~5 days.
-
Enjoy!
