Grass-fed Burger Patties

In light of our fully stocked deep freezer, I thought I’d share my grass-fed burger patty recipe! We just purchased a 1/4 of a cow from the Vegas Coop and the majority is ground beef. Which provides a lot of recipe options: meatballs, marinara, casseroles, shepherd’s pie, stir-fries, chilies, soups, and these burger patties!

Grass-fed beef has a different cooking profile than grain-fed, feedlot beef. It’s leaner, so it cooks faster and dries out quickly. To remedy this, I add an egg yolk (sometimes two) and onion. The egg yolk adds fat and moisture while the minced onion adds additional texture and flavor.

Pair these burger patties with a bun, over rice with fried eggs, some greens, or roasted vegetables like I show below. I like to eat my burgers with roasted onions and sweet potatoes, along with my base salad. I’ll show you how to make the vegetables below, they’re easy to roast in the oven while you prep the burgers. And if you enjoy the bbq flavor, you can grill your patties, sweet potatoes, and onions!

Grassfed Beef Burger

In this recipe I pan fry my burger patties. My husband likes them best cooked this way, with the outer edges seared and cheese melted all over. We don't add buns, just extra veggies, but you can add one if you'd like! Below I'll show you how to make the sweet potato fries and roasted onions that I like to pair with my burgers. Super simple, you can bake the veggies before you start prepping your burgers for a full meal!

Ingredients

Sweet Potato Spears

  • 1-3 Sweet Potatoes, peeled and speared
  • 2-4 Tbsp Coconut Oil
  • 2-3 Tbsp Herbs De Provence
  • 1/2 Tsp Salt

Roasted Onions

  • 2-4 Onions, sliced thinly into ~1/4 inch rounds
  • 2 Tbsp Coconut Oil
  • 2 Tbsp Herbs De Provence
  • 1/2 Tsp Salt

Burger Patties

  • 1 Pound Grassfed Ground Beef
  • 1 Egg Yolk
  • 2 Tbsp Grated or Minced Onion ~ 1/4 of a red onion
  • 1 1/2 Tsp Salt
  • 1 Tbsp Pepper

Instructions

Sweet Potato Spears

  1. Peel and cut sweet potatoes into even pieces. Toss with coconut oil, salt, and herbs. 

  2. Bake at 415 degrees fahrenheit on a parchment lined baking sheet until slightly browned. Toss as needed. 

Roasted Onions

  1. Peel and slice onions into 1/4 inch rounds. Toss with coconut oil, salt, and herbs.

  2. Bake at 415 degrees fahrenheit on a parchment lined baking sheet until slightly browned. Toss as needed.

Burger Patties

  1. Hand mix one pound of grassfed ground beef with one egg yolk and two tablespoons of minced or grated red onion. 

  2. Form into six even patties. 

  3. Salt and pepper each side. I use one and a half teaspoons of salt and one tablespoon of fresh pepper. 

  4. Heat a pan on medium-high heat. Fry burger patties for four minutes each side. After first flip, add cheese. Remove from heat and let rest for two minutes. 

  5. Serve with sweet potato fries, roasted onions, and salad!
