Chicken Soup

Health is what I think about when I eat this soup. This recipe is rich in herbs and spices, all shown to positively affect your immune system. Along with mineral rich bone broth which helps heal the digestive tract, this is a pretty powerful soup. Plus, the coconut milk helps with the absorption of those nutrients, win! It also adds a creamy component that pairs beautifully with the turmeric and savory seasoning.

I encourage you to add as many vegetables to this soup as you can! I always add extra celery because it doesn’t add bulk to this soup or change the flavor, but it does add extra vegetable matter! More vegetables, the better. Also, the parsley. Such a delicious herb that packs quite the punch when it comes to flavor and health benefits. I like to add a whole bunch at the end, that way it stays bright green and flavorful. Hope you love this nutrient rich, homestyle soup! Great paired with pumpkin seed crackers.

Chicken Soup

This recipe can be made cooking the chicken a few different ways. Use the instant pot, fry in coconut oil, or even use a rotisserie chicken. Just add the chicken at the end, once all the veggies are cooked and you'll have yourself a tasty bowl of soup! The combo of homemade chicken broth, turmeric, garlic, coconut milk, and parsley make this quite a healthy and flavorful soup.

Ingredients

  • 2 Tbsp's Coconut oil
  • 1 Pound Chicken thighs
  • 1 Onion
  • 3 Carrots
  • 3-5 Celery stalks - also use the leaves for extra flavor
  • 3 Cloves Garlic *Optional - the Italian seasoning has garlic in it
  • 2-3 Tbsp's Savory Seasoning - Balanced Bites
  • 2 Tbsp's Italian Seasoning - Balanced Bites
  • 1-2 Tsp's Thyme
  • 1/2-1 Tbsp Turmeric
  • 6-8 Cups Chicken broth
  • 1 Box or can Coconut milk
  • 1 Bunch Parsley
  • Salt and pepper to taste
  • Roasted potatoes or cooked rice *Optional - you can add these in at the end

Instructions

  1. You can cook the chicken thighs in two ways. In the instant pot for shredded chicken or cut into pieces and cooked over the stovetop. Both are good, but sometimes the instant pot is easier since you don't have to cut up the chicken. If you choose the instant pot method, add your one pound of chicken to the pot along with a few seasonings. I used an onion, 2 tbsp's parsley, 1 cup of chicken broth, salt, pepper, and about 1/2 tbsp of Italian and savory seasoning. Throw everything into the instant pot, set the timer for 13 mins, let it depressurize and done! Easy shredded chicken. 

  2. Another option is browning the chicken pieces in some coconut oil with salt and pepper. Cook bite sized chicken pieces and set aside. You will add the chicken back to the soup at the end. 

  3. Add some coconut oil to the soup pot and sauté for a few minutes. I like to first cook the onions on their own, before adding other veggies, to release their flavors.

  4. Add diced carrots and celery to soup pot. Cook until soft. 

  5. Stir in seasonings. 

  6. Add grated or minced garlic and stir until fragrant, about 30 seconds. 

  7. Cover vegetables with chicken broth. 

  8. Add coconut milk. 

  9. Add your chicken back to the soup pot. Now is the time to add roasted potatoes or cooked rice as well. 

  10. I love parsley because it's quite the nutrient rich herb, so I stir in about 1 chopped bunch to finish this soup. 

  11. Goes great with pumpkin seed crackers and more!
